Fresh fruit makes icing runny. Extracts can taste artificial. Freeze-dried fruit powder solves both problems: it carries real flavour and natural colour with no water at all.
Buttercream, cream cheese frosting, meringue, macarons, white chocolate, shortbread, yoghurt, porridge, smoothies and milkshakes. It also makes a lovely dusting for desserts and truffles.
Powder is thirsty. Keep the lid on tight, use a dry spoon, and add it to mixtures towards the end so the colour stays bright.
It is freeze-dried fruit that has been ground into a fine powder. Plain versions contain only fruit, with no added colour, flavouring or sugar.
Start with about 10g of powder for every 250g of buttercream, taste, and add more if you want a stronger flavour or colour. Raspberry is more intense than strawberry.
Yes. Blitz freeze-dried fruit in a dry blender or spice grinder for a few seconds, then sieve out any seeds. Make small amounts and keep the powder in an airtight jar, because it clumps as it absorbs moisture.
